Cask Strength Bourbon
STAVED SERIES
The International Staved Series came from a curiosity I’ve had for a long time about how much wood alone can shape a bourbon’s final character. We started with barrels from the same run, the same age, and the same mash bill, then finished each one with a different internationally sourced wood stave, letting those woods push the whiskey in their own direction. The goal wasn’t to make something louder or gimmicky, but to highlight how geography, wood type, and tradition can influence flavor in ways that are both subtle and dramatic. Even though these barrels started from nearly the same place, they now couldn’t be more different in appearance, aroma, and taste.

Born in the heart of the Midwest, just north of Kentucky, these barrels made their way west to the stunning San Diego coast. Here, under the expert care of San Diego Distillery, The Monk’s Straight Bourbon & Rye Whiskeys continue their 5–6+ year journey, aging in a valley with San Diego’s most dramatic temperature swings, perfect for capturing the region’s soul. IMAGINATION IS THE BEGINNING OF CRAFT CREATION
Our primary aim in distilling is to blend the realm of craft ingredients with that of spirits. To achieve this, we infuse our recipes with a diverse array of non-standard malts, often used in the creation of other spirits. Our specialized on-grain fermentation and distilling methods yield an exceptional range of spirits, each with a unique character and depth of flavor.
Driven by our commitment to excellence, we've recently launched a sourcing program for premium aged whiskeys from around the world. This addition has allowed us to broaden our offerings and craft some of San Diego’s finest spirits.
NOTES FROM HEAD DISTILLER T. TRENT TILTON
More than 20 years ago, T. Trent Tilton began his journey as a homebrewer, setting the stage for his signature approach to crafting spirits. In 2012, he became a trailblazer in San Diego's emerging craft distilling scene, soon founding San Diego Distillery. Blending his deep roots in beer-making with a bold use of non-traditional ingredients, Trent has created specialty spirits that are now highly sought after nationwide.
